I bag fresh mussels (frozen also work)
1 bag fresh clams (ditto)
1 dozen shrimp (medium to large, depending on your budget) peeled, peels reserved
1 bag frozen mixed seafood (has squid, baby shrimp, other stuff; can substitute scallops or others)
1 pound or so white fish (cod, haddock, etc.)
1 carton Pomi brand minced tomatoes
1 bunch cilantro
4 cloves garlic
1 medium onion
2 jalapenos
1 cup dry white wine
1 cup water
1 bottle or more clam juice
salt and pepper to taste

Procedure:

Add the wine and water to a large pot and bring to a boil
Add the mussels and cook, covered, until the shells just open
Remove mussels to a bowl to cool; discard any that did not open
Add clams to the pot and cook, covered, until the shells just open
Remove clams to a bowl to cool; discard any that did not open
Add shrimp shells to the pot and cook, covered, for about 10 minutes
Remove the meat from the cooled clams and mussels and reserve
Add shells from both to the pot
Cook covered, at a soft boil, for about 10 minutes
Remove shells and pass liquid through a fine mesh strainer or cheese cloth
Wash out pot — there likely will be sand and nasty bits on the bottom
Return liquid to pot and bring back to a simmer
Add the box of Pomi tomatoes
Tie the bunch of cilantro with butcher twine just below the leaves and cut bunched stems off; reserve leaves
Add bound cilantro stems to the pot
Finely chop the garlic and add to the pot
Finely dice the onion and add to the pot
Halve jalapenos, remove seeds and white membranes, and finely chop
Add jalapenos to the pot
Cook, uncovered and at a simmer, until broth thickens slightly, about 15 minutes, or longer to taste
Taste, adding clam juice for additional flavor if necessary
Add salt and pepper to taste
Return the clams, mussels and shrimp to the pot
Add bag of frozen mixed seafood or other if using
Cut white fish into one-inch cubes and add to pot
Allow to simmer until fish and mixed seafood are just tender — do not overcook the fish!
Spoon into large bowls and sprinkle chopped cilantro leaves on top
Serve a really crusty bread on the side

Speed version: Skip the stock-making and add two bottle of clam juice to the wine and water.
