+ spread a quantity of pizza dough onto surface

+ i had a thing of almond paste sitting around. if this is true of you, too: roll out a thing of almond paste, or half of one, into flatness. if you somehow end up with a circle-shaped giant almond pancake, then, amazing; just press it onto the pizza circle, circle-on-circle style.

…but my almondshit always comes in a cylindrical tube and aint nobody got time to pound that thing into radial-symmetry submission – i just roughly roll it out and smash the resulting irregular floppy slabs of paste onto the pizzadoughsurface. just Pangea that shit into place. whatever.

alternatively, one could handroll bits of the almond paste into ballbits and use as part of the crumble topping instead.

+ spread thin layer of (blueberry, in this case) preserves across the doughpaste surface for lubricant. could also introduce a nut butter here. but i would use it in addition rather than instead of…. user beware of sacrificing the fruity brightness of the preserves

+ assemble crumble topping. i use misc. pantry stuff:

— a few tablespoons of coconut flour

— a few tablespoons of oats

— a few tablespoons of grapenuts ©

— a heaping spoonful of brown sugar

— i intended to use dried unsweetened coconut flakes, too. but i forgot. they weren’t missed.

 

^ combine above dry ingredients or their analogues in a containerbowl, then take 1 big spoonful of coconut oil and a couple pats of butter (or use all of either and none of the other); mash the fats around in the bowl with hands until the whole mess is oilycrumblynice (this is fingery work; massage it)

— crumble the crumble onto the bed of blueberry.

—  [on a whim i then took a couple spoonfuls’ worth of the “honey roasted” honey bunches of

oats and spread em thinly on top for extra unincorporated surface crunch]

— drizzle chocolate sauce (i melted a chocolate bar) decoratively over the whole thing, this makes it totally classy

— conservative pinch of salt on top of all that (edit: been putting the salt on top of the jam in subsequent batches)

— ~425 degrees until browned crust

almond coconut fried sticky rice balls

 

– soak the shit out of some sticky rice (somewheres between 3 and 30 hours)

– cook to goo, in coconut milk & 1-2 tablespoons coconut oil (frequent or near-constant stirring probably required, lid-off recommended)

– roll into 1 to 3inch balls and/or pattycakes and/or amorphous globules

** optional: shove an almond or hazlenut in each riceglom

– coat the balls in a suitable crumb(l)y topping, e.g. nut meal or [pulverized [graham cracker/cookie/biscuit/cold cereal/granola etc]] — (my topping typically = dried almond pulp from nutmilking) — .. (could substitute any kinda flour in a pinch, but this would be a grave textural sacrifice)

– fry in coconut oil to goldenbrown crispystuffs

– dust the hotgreasyballs in powdersugar & cinnamon

+ diced cucumbers in a bowl (usually 1 serving for me is half of one of those giant canadian fuckers)

+ minimal amount of soy sauce (.75 tablespoon perhap)

+ combine & stir/toss gently for a good 20 seconds to a minute — cukes should absorb soy sauce nicely

 

add these things:

+ black pepper, dill, fresh minced garlic – 1-3 cloves

+ crushed up bits of those wasa crackers or other grainy numcrunch; i’ve been burning through this box of fancy pumpkin seed cheddar crispbread

 

super extra note: i like to eat it with a tiny spatula to get every bit outta the bowl, less awkward than a spoon

cold kamut salad

  • cooked kamut/khorasan wheat berries, chilled (main ingredient; or substitute other grain)
  • cucumber (diced) (roughly 1:2 with kamut or to taste)
  • red onion (minced) (roughly 1:2 with  cucumber, or more)
  • black olives (chopped, diced or minced) (roughly 1:4 with onion)
  • sexiest feta available.. or something bleu… some crumbly cheese with zing, to taste (if the salad is likely to sit around in the fridge for more than 6 hours, withhold feta to avoid sliminess… instead crumble over individual portions when serving)
  • zest of X number of lemons (about three lemons’ worth per cup of uncooked kamut, which seems like maybe half a lemon per serving. if this isn’t achievable simply use all available zestable zests.. could substitute fresh lemon juice or somesuch. if there’s time, let the zest dry out before using [between 1-5 hrs depending on factors…], ideally getting it dry enough so’s it can be crumbled in)
  • cayenne, a largeish dash
  • paprika, a lesser dash
  • black pepper, a heavy-handed dash
  • (NO salt! there’s plenty from the olives & feta)
  • generous slew of raw sunflower seeds (optional but highly recommended for keeping everything else dry/achieving maximal fluffiness)
  • indulgent slew of raw pine nuts (optional)
  • sprinkling of raw sesame seeds (optional)
  • sprinkling of raw pumpkin seeds (optional) (significantly increases the crunch factor)
  • broken flax seeds (optional) (more crunch. cracked seeds preferable to ground, since flax meal is so ravenously absorbent/oily. if using sprinkle only over individual portions [~1 TB per] when serving, to avoid egg-like flaxslime glomming everything up as it the wet ingredients make it turn to ooze. schluuupppp.)
  • dress, or don’t. i don’t.
  • more optional additional ingredients: most e’erthing

goal re: proportions = looking for visible flecks of pepper & feta dispersed pleasingly. each biggish spoonful should have a wee little chunk or two of olive, & proportionally more of everything else.

^ i rarely accomplish this due to impoverished olive supply and laziness re: cutting them as fine as is necessary…  olives/other veggies can be gently pulsed in food processor but this will make the whole salad a little less “bright” and crisp in appearance.  more importantly this will tend to make it significantly wetter, particularly if other veggies are added (though the cuke is mostly to blame)…  it benefits greatly from 10 minute air-out in a big roomy strainer after assembly, during which any added nuts/seeds will also absorb moisture.

in the event of a major fuckup that somehow renders it completely sodden and unappetizingly sloplike, carefully folding in dried nut pulp/meal or breadcrumbs by the spoonful helps.

…. it can also be wokked up (sans cheese) into a hot salad to get around insurmountable moisture problems. (if doing it hot purposefully, swap cuke for zook)

sherry mushrooms & beef w/spätzle

+ make spätzle or other pasta; reserve the water

 

+ cook some pert little mushrooms (e.g. baby bella), halved, in a little oil on low-medium heat until they start to exude their juicefluids, then add sherry & about 1 tablespoon honey & reduce.. if liquid runs low add more sherry and/or red wine

 

+ at the same time, cook some beef & cube it & set aside, OR, better, cook to almost-done, then cube and throw in with the mushrooms when they’re about halfway done

 

+ sauce option: combine pan juices of beef and mushrooms with a little pasta water & simmer till desired
+ pile everything together, add pepper, salt to taste, cheese if desired

cioppino

I bag fresh mussels (frozen also work)
1 bag fresh clams (ditto)
1 dozen shrimp (medium to large, depending on your budget) peeled, peels reserved
1 bag frozen mixed seafood (has squid, baby shrimp, other stuff; can substitute scallops or others)
1 pound or so white fish (cod, haddock, etc.)
1 carton Pomi brand minced tomatoes
1 bunch cilantro
4 cloves garlic
1 medium onion
2 jalapenos
1 cup dry white wine
1 cup water
1 bottle or more clam juice
salt and pepper to taste

Procedure:

Add the wine and water to a large pot and bring to a boil
Add the mussels and cook, covered, until the shells just open
Remove mussels to a bowl to cool; discard any that did not open
Add clams to the pot and cook, covered, until the shells just open
Remove clams to a bowl to cool; discard any that did not open
Add shrimp shells to the pot and cook, covered, for about 10 minutes
Remove the meat from the cooled clams and mussels and reserve
Add shells from both to the pot
Cook covered, at a soft boil, for about 10 minutes
Remove shells and pass liquid through a fine mesh strainer or cheese cloth
Wash out pot — there likely will be sand and nasty bits on the bottom
Return liquid to pot and bring back to a simmer
Add the box of Pomi tomatoes
Tie the bunch of cilantro with butcher twine just below the leaves and cut bunched stems off; reserve leaves
Add bound cilantro stems to the pot
Finely chop the garlic and add to the pot
Finely dice the onion and add to the pot
Halve jalapenos, remove seeds and white membranes, and finely chop
Add jalapenos to the pot
Cook, uncovered and at a simmer, until broth thickens slightly, about 15 minutes, or longer to taste
Taste, adding clam juice for additional flavor if necessary
Add salt and pepper to taste
Return the clams, mussels and shrimp to the pot
Add bag of frozen mixed seafood or other if using
Cut white fish into one-inch cubes and add to pot
Allow to simmer until fish and mixed seafood are just tender — do not overcook the fish!
Spoon into large bowls and sprinkle chopped cilantro leaves on top
Serve a really crusty bread on the side

Speed version: Skip the stock-making and add two bottle of clam juice to the wine and water.

quasi-asian tofu sammich

take favorite sammich bread….

bottom slice gets balsamic vinaigrette

lay sliced cheese upon the bread… preferably pale

add two squares of COLD cooked tofu, preferably asian-seasoned with sesame seeds but it don’t matter much

take a handful of broccoli slaw, toss in a dish with peanut sauce until slathery, pile on top of the the tofu

top slice of bread: spread on a very conservative amount of dijon or grainy mustard, then slather more peanut sauce over that

eat, messily.

sprouty sandwich

take your favorite grainy sandwich bread &, optionally, toast two slices

  1. BOTTOM SLICE gets balsamic vinaigrette — preferably administered through some kind of misting apparatus for even coverage
  2. then slather with your favorite hummus
  3. load up with thinnnnn cucumber slices
  4. add cheese slices if desired, preferably something pale
  5. mound on some alfalfa sprouts, or other sprouts
  6. TOP SLICE gets dijon mustard

optional: capers, celery seed

simple comfort pasta

tri-color spiral pasta, al dente
your favorite pesto
mushrooms & zucchini (optional. pre-cook.)
pine nuts
best feta you can find (or your favorite salty crumbly cheese)

MIX IT TOGETHER

cold brew coffee

this is written assuming you are using a beer growler or other 64oz container, but, generally speaking the water-to-coffee ratio is liiiike 8:1…. i love using a beer growler with dark glass though

  • get 1.5 cups ground coffee. if you have some crap/cheapo coffee laying around, this is the time to get rid of it/let it shine in a way that it won’t usually, although obviously your favorite fancy shmancy blend will be well-served in this context too

overview: basically you put the coffee in a container, fill the container with the right amount of water and let it sit in a cool, dark spot for 12-24 hours. i prefer longer brew times but usually get impatient and pull it at like the 20-hour mark or so.

finer-grain steps:

  1. alternate adding a little coffee at a time and running a little water over it in a circular motion, repeat until all the coffee’s in there and then fill the rest of the growler up with water. i usually add the grounds in about 5 additions. this makes sure it starts to pre-soak evenly.
  2. when it’s all in thurr, cap the growler and lay it on its side to expose as much of the grounds as possible to the water’s surface area. do this gently, because excessive agitation of the grounds is not desirable in this process. leave it for 5-10 minutes, then gently rock the growler back and forth on its side a few times to make sure all grounds are evenly wet — then slowly stand it back up (if you go too fast all the grounds will rocket up to the bottleneck and sit above the water level). or you can store the thing on its side if you have room.
  3. put it away. i like to actually brew it at room temperature, but you can always a/b test and see if you like it better when it spends the 24 hours in the fridge instead.
  4. after the 24 hours have elapsed, strain out the grounds. i just use a fine mesh thing and it is plenty sufficient, but a nut milk bag or cheesecloth or coffee filter are the obvious choices if you want it 100% unmuddied, derp.
  5. after brewing, chill it.

now you have coffee concentrate. CONCENTRATE. if you try to drink an 8oz mug of this stuff you will probably have negative consequences of some kind of other, be they cardiac or psychological

  • optional: if you own those heat-safe freezer pearls or something similar, great — if not, pour some of the coffee into ice cube trays and freeze so you can have ice coffee that doesn’t dilute… cuz i like it to stay pretty concentrated.

consumption: i guess most people would dilute with water…? or make a latte of some kind? but i just like to do this:

2-3 fingers of cold coffee in a tall glass, with 2-3 coffee ice cubes OR nut milk ice cubes, and a little sea salt sprinkled on the ice. seriously!

sometimes i will do coffee & nut milk in 1:1 ratio, or 2:1. make stripped-down pumpkin spice latte with pumpkin seed milk and a little cinnamon and give the finger to starbucks

easy-as-fuck jam (no pectin required)

3 cups berries or fruit of choice — combine in saucepan with generous dash of honey or sugar to taste (max 1/4 cup, less if you’re using a mild fruit. i keep it tart). cook over low-medium heat, stir gently until berries start to burst (ie blueberries) or until they’re mash-able and liquidy and melty. bout five min.

add 1/4 cup chia seeds. keep cooking & stir often until very thick. about 15 min; less if recipe is halved. cool completely.

**STORE IN THE FRIDGE** for up to 7 days

thai beef over coconut rice

(15-20 min prep, 10-15 min cooktime)

+ prepare first:

1. minced ginger
minced onion
minced garlic
^ a few tablespoons of each of above, or more.
3 red chiles (chilis? shit), minced

^ combine and set aside.

2. in a small bowl or ramekin HAHAHA combine two tablespoons plus one teaspoon, each, of soy sauce (i usually use ponzu) and fish sauce, with one heaping tablespoon brown sugar… stir and set aside

3. approx. 1 cup or heaping handful of fresh basil; it would be difficult to have too much. mince & set aside.

1.25 cups rice in a saucepan… basmati or jasmine probably most appropriate, eh. dump in one 13oz can coconut milk (or approx 1.5 cups other coconut milk) & ¾ cup water; bring to boil, cover & reduce to simmer etc — takes less time than normal rice (~10 min). do not burn. i add a tablespoon of coconut oil toooooo

once the rice water is on its way, put skillet or wok on high heat (have had predictably favorable results with the cast iron skillet)… i superstitiously give the pan a few “moments” to lose its chill before i…
…add garlic-ginger-onion-chile mixture with 2-3 tablespoons of oil,
stir constantly for 30 seconds to one minute. oftentimes i burn the garlic in my carefreedom, oops. that’s ok. it’s goodbitter
then add about 1.25lbs ground beef & brown (4-6 minutes)…
near the end of the meatcooking: add the soystuff, cook for 30 seconds to 1 minute more, then when the meat is essentially ready, reduce the heat to med-low, add basil & stirrrrrr until it wilts very slightly (20 seconds? it’s quick).
& done.
